Healthy Breakfast Recipes 💪🍳


After gorging ourselves on endless roast potatoes and entire boxes of Quality Street and Fererro Rocher in the past week, we at Coconut Lane feel it’s time for a detox, and what better place to start than breakfast? Check out our guide to the perfect way to start a healthy day, whether it be a quick bite before work, or an indulgent brunch on a lazy Sunday.

Perfect For: Cold Wintery Mornings

For a warming, comforting start to the day, look no further than this quick and simple recipe. Don’t overlook porridge - it’s not as boring as it sounds! And when topped with the right ingredients it makes for a super tasty, healthy bowl of goodness! Mix and match with different dried and fresh fruits, seeds and nuts to avoid it getting boring!

Banana, Almond and Cinnamon Porridge

160g Rolled oats

600ml milk

2 bananas

30g flaked almonds

½ tsp ground cinnamon

2-3 tbsp maple syrup or honey

1. Place the oats and the milk a pan over a medium heat with a pinch of salt and stir with a wooden spoon.

2. Bring to a steady simmer for 5 minutes, stirring as often as you can to give you a smooth creamy porridge. Add more milk for a runnier consistency.

3. Peel and slice the bananas

4. Add the almonds to a small frying pan over a medium heat for 3 to 4 minutes, until lightly golden.

5. Stir the cinnamon and most of the maple syrup or honey through the porridge.

6. Serve with the bananas and toasted almonds on top and the remaining syrup or honey drizzled over.

Perfect For: Breakfast In Bed

Salmon is known for its rich omega-3 content and for being ‘brain food’, which, alongside the protein in the eggs, make for a perfect breakfast before a long hard day of thinking! Alternatively, rustle this up and served to a loved one as a luxurious breakfast in bed. Serve with whole grain or seed bread for added fibre.

Smoked Salmon and Scrambled Eggs On Toast

10g low fat butter

2 large    free-range eggs

2 slices bread, toasted

sea salt

freshly ground black pepper

2 slices smoked salmon

1 lemon

  1. Melt the butter in a small saucepan over a moderate heat.

  2. Whisk the eggs in a bowl and add to the saucepan.

  3. Turn to a low heat and stir the eggs continuously until firmer, but not hard.

  4. The egg will continue to cook even when the heat is turned off, so undercook them slightly and leave them in the pan while you butter your toast.

  5. Season the eggs and pour over the toast. Drape the salmon over the eggs and serve with the lemon wedges.

What better way to start your day than with a breakfast bar? Filling, tasty and easy to grab, they can be made beforehand and eaten on your way to work, meaning more time for staying in bed!

Granola Bars

150g of jumbo oats

2 medium, very ripe bananas  

60g of melted butter

60g of cherries

60g of cranberries

40g of sunflower seeds  

40g of pumpkin seeds

  1. Preheat the oven to 200C.

  2. Mix the oats, cherries, cranberries and seeds together in a bowl.

  3. Pour in the melted butter and mix in thoroughly to make sure the oats are well coated.

  4. In a separate bowl, mash the bananas into a pulp with a fork before adding to the oat mixture, and mixing well.

  5. Spread the mixture into a 30x20cm tin and bake in the oven for 20-25 minutes. Once cooked, transfer to a wire rack to cool, then cut into six bars.

Nothing screams detox more than a green smoothie. Full of antioxidants and vitamins, a nutritious smoothie or juice is perfect for ridding your body of toxins, and they can actually taste quite nice! Even better, they can be sipped on the go, perfect for when you don’t feel like eating when your first wake up.

Kale And Coconut Smoothie

120ml coconut milk

120g stemmed and chopped kale or spinach

1/4 medium pineapple

1 ripe banana, chopped

  1. Combine all the ingredients in a blender and puree until smooth. More more water to reach the desired consistency.
